Phool makhana — fox nuts harvested from ponds in Mithila, Bihar — has become India’s favourite guilt-free snack. Roasting it well is simple once you understand what goes wrong.
The method
- Dry-roast 100 g makhana in a heavy kadhai on low heat for 8–10 minutes, stirring often.
- Press one between your fingers: it should crush with a clean snap.
- Add 1 tsp ghee, a pinch of black salt, pepper and a little chaat masala. Toss for one minute.
- Cool completely on a plate before filling the jar.
Why it goes soft
Makhana absorbs humidity quickly. Storing it warm traps steam, and a loose lid lets the monsoon in. Cool fully, use a glass jar with a rubber seal and keep it away from the stove.
