Snow-White, Light or In-Shell? A Guide to Buying Walnuts

Walnuts are graded mainly by kernel colour. The lighter the kernel, the milder and less bitter the taste — and the more care went into harvesting and drying.

Snow-white kernels

The palest grade, with a sweet, buttery flavour and almost no bitterness. Our Snow-White Walnut Kernels are what we eat straight from the jar.

Light halves

Slightly darker but still mild, and perfect for baking, salads and breakfast bowls. Try the Light Halves Walnuts or the larger Chilean Light Walnuts.

In-shell akhrot

The way walnuts were sold for generations. The shell protects the kernel, so in-shell walnuts stay fresh longest — and cracking them is half the fun in winter. Our In-Shell Kashmiri Akhrot have thin shells you can crack by hand.

Storage tip

Walnuts have more delicate oils than any other nut. Keep kernels in an airtight jar in the fridge and they will stay sweet for months.
